Picadillo

Picadillo is popular recipe in my house. So to the internet I went for a decent picadillo recipe which I found on the Good Housekeeping site.

I had all the main ingredients and I was hungry. It is a real simple dish that tastes good. The recipe itself could be used for many other dishes like stuffed peppers. You could even put it on top of rice. I served mine with pierogi casserole.

Ingredients

1 teaspoon olive oil
1 medium onion, finely chopped
2 cloves garlic, crushed with garlic press
1 pound extra-lean ground beef (96% fat free)
1 can (15- to 19-ounce) black beans, rinsed and drained
1 can (15-ounce) crushed tomatoes with tomato puree
1/4 cup dark seedless raisins
3 tablespoons coarsely chopped pimiento-stuffed olives (salad olives)
3 tablespoons tomato paste
1 tablespoons red wine vinegar
1 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon ground black pepper

NOTE: I didn't have the olives, which do help with flavor, or the raisins.

First cook the onions in oil on med heat until cooked thru. Then add the garlic and cook for a minute. Add the ground beef and cook until no longer pink.

Add the beans, tomatoes( I used a can of diced and an 8 ounce can of sauce), raisins, olives, tomato paste, vinegar, cumin, salt, and pepper.

Picadillo
Bring to a boil then reduce heat to med low, simmer for 10 min. Like I said this meat mixture would taste good in a variety of dishes. It is a great taste with a mellow flavor.
