Tropical Traditions Coconut Cream Concentrate Review & #Giveaway


Tropical Traditions Coconut Cream Concentrate is 100% natural coconut made from certified organic Philippine coconuts grown with no pesticides or fertilizers. It contains No additives and No preservatives and is all coconut and no water.

I figured this could be used to cream my coffee without using creamers that are processed and full of sugar. When I made my coffee with the Coconut Cream Concentrate it came out grainy. Unfortunately for me I failed to realize what Coconut Cream Concentrate is. Coconut Cream Concentrate is the meat of the coconut and so it is not soft and creamy because it has all the fiber in it.  The grainy texture is normal, so if you don't have a problem with that then go for it.

The Coconut Cream Concentrate I feel is best used when cooking. It can be mixed right into the batter because of its low moisture content. You can also use the coconut cream in soups, smoothies, or ice cream.  I have heard people eat it straight on crackers like a spread.  Because there is no sugar in the cream I need something sweet to offset the taste. I made a fluff and coconut cream sandwich and it was pretty good. The fluff has just the right amount of sweetness for the coconut cream.  I also made the coconut peanut butter granola recipe found on www.freecoconutrecipes.com.  That recipe is a perfect use for the coconut cream concentrate. Granola is a healthy treat and you can mix many things in it like nuts, dried fruit, etc. It did have a strong peanut butter flavor but I didn't mind.


There is one thing you must do first when you receive your coconut cream.  You must prepare it. The video below shows you how.

Cooking with Bob's Red Mill Review and #Giveaway

 Bob's Red Mill has sent me their Bountiful Black Bean Soup Mix, Whole Wheat Pastry Flour, Whole Wheat Pearl Couscous, and their Bob's Red Mill Cookbook to review.


Bountiful Black Bean Soup Mix

Eating healthy is something I strive for most of the time. I believe by eating healthy my family and I will feel better and hopefully live longer. A part of eating healthy is getting enough fiber in your diet. The recommended intake of fiber from the NFC is about 32 grams a day. In just one serving of Bob's Red Mill Bountiful Black Bean Soup Mix you get 23 grams. That is more than half of your daily value. I love the fact that such a small amount will give me the majority of fiber for the day. I even tried out the recipe they had on the back (Bountiful Black Bean Soup Mix) and it was delicious. I thought I didn't like beans very much but this soup mix has changed my mind. It is a hearty meal or even side dish that will fill you up.


Whole Wheat Pastry Flour
You may be wondering what is the difference between regular flour and whole wheat pastry flour. Pastry flour has less protein than all purpose flour which makes it less glutenous, which will make your baked goods feathery light. The whole wheat pastry flour is 100% stone ground and contains the germ, endosperm, and bran from the wheatberrys. I made little chocolate cakes with this pastry flour and they were delicious. It didn't take long before they were all gone.


Whole Wheat Pearl Couscous

Whole Wheat Pearl Couscous are small balls of toasted whole wheat flour. Eat 1/3 cup of this couscous and you will get seven grams of protein and five grams of fiber. A very healthy alternative to pasta or rice. This is a very versatile product that can be used on salads or even as a side dish. I chose to eat it as a side dish. Preparing this is easy and simple. Boil water, add couscous, boil and cover.
The flavor was nutty and a little chewy. I like the fact that it is a healthier alternative to pasta or rice which I have an addiction to.



Bob's Red Mill Cookbook

The Bob's Red Mill Cookbook is a collection of healthy recipes featuring their products. I love this cookbook. While there are no pictures it makes up for it in the easy layout of the recipes. The cookbook is separated into six categories: Morning food, salads, soups, snacks and sides, main dishes, and sweets. Throughout the cookbook are little bits of useful information on grains or legumes and how to cook them, which is great if you have never heard of it. Another great feature of the cookbook is that it makes it easy for vegetarians, vegans, and people with gluten intolerance to find recipes by labeling the recipes with a picture key.

I did not end up tasting this soup because we do not like mushrooms. I am sure that the flavor is great and restaurant quality just like the other three soups.

Tomato Florentine
Cheese-filled tortellini, white meat chicken,
spinach and tomatoes in a rich tomato bisque with a hint of basil.
This soup is my favorite of them all. The tomato bisque is creamy with a touch of spice to give it a little kick. The broth is just so wonderful I could eat this soup without all the extra bits in it. Unfortunately, I was so captivated by the taste that I somehow forgot to take a picture of my favorite soup, so you will just have to trust me this is a must buy.

I ordered the Border Scramble biscuit bowl a delicious combination of spicy pepper jack cheese, crumbled sausage, home fries, diced tomatoes, and onions on a flaky buttermilk biscuit bowl. 
Topped with sour cream, scallions, pepper jack cheese, and a spicy ranchero sauce. This is a very flavorful meal with a good amount of kick. It was really filling and I was only able to eat half the bowl and my side of fries. It was almost like eating a taco only better.


My husband ordered the Spinach, Bacon, and Tomato biscuit bowl. A blend of fresh baby spinach and bacon scrambled eggs and home fries on top of a flaky buttermilk biscuit.  
Topped with hollandaise sauce, shredded cheddar cheese and scallions. I just had to steal a bite because it looked so good. It tasted good too. I don't normally like hollandaise sauce but this one tasted creamy and reminded me of these breakfast pizzas I like. As you can see he ordered a side of strawberry yogurt which didn't last too long after this picture was taken.



Overall our experience was great. The staff was friendly and even offered us drinks to go. I know when I go back to Bob Evans I am going to have a tough time deciding what I will eat. Both of these dishes tasted good and they make me want more.

Walking With The Juppy Review & Giveaway



Now that my baby is 8 months old it wont be too long before he begins walking. Just this past week he has been standing up while holding onto something so I know he will be ready soon.

I will be ready because I have the Juppy. What is the Juppy you ask? It is the only baby walker that fits in a purse. The Juppy is a baby walker that helps your little one learn to walk without the added back strain. Instead of holding your baby by his underarms, which is harmful to his joints, you use the juppy to help your baby walk.

The Juppy is designed so you may stand and help your baby walk at the same time without having to lean over.  The juppy is made out of sturdy fabric which has a zipper to help ease your baby into. The handles can be adjusted so that the length is the perfect fit for your height.  You just hold the straps and let your baby go.






My baby was thrilled when I put him in this. He loved being able to walk around the house. While it was great not to have to bend over to help him walk I did notice that I personally could only use the Juppy for a short period of time because of the arm strength it took.

The Juppy is a workout for your arms because you are still holding your baby to some extent. Other than that this product works great. I know in the future when my baby is ready I will pull the Juppy out and help him explore.

Tropical Traditions Organic Coconut Peanut Butter Review & Giveaway


Tropical Traditions organic coconut peanut butter is made from organic peanuts and organic coconut and that is it. There are no sweeteners, no preservatives, no binders, and no fillers. With Tropical Traditions organic coconut peanut butter you know exactly what you are eating.

When I received the Tropical Traditions coconut peanut butter I noticed that it was liquidy. Now, according to their label it is normal for the oils to separate. All you have to do is stir the oils back in and you have the normal consistency of peanut butter.

I stirred and I stirred and it was still liquidy,  so I put it in the fridge thinking that would help. It did solidify some and so I began to stir yet again only to have a very liquid peanut butter. I don't know if this is normal but I figured it had something to do with the Florida heat. Overall I don't see this as a bad thing it only means no PB&Js.

Since the coconut peanut butter was liquid and was not sweet I figured it would taste great in a smoothie. A chocolate banana coconut peanut butter smoothie!!! I am a chocoholic and my weakness is anything that combines chocolate and peanut butter. The smoothie was simple: frozen banana, cocoa powder, organic coconut peanut butter, milk, and a little bit of sugar. This smoothie was delicious. I love the flavor that the organic coconut peanut butter brings to it.

I also decided to try the coconut peanut butter on top of ice-cream. I know, what a way to ruin something that is healthy for you, but I couldn't help it.


I poured the peanut butter on top of the ice-cream and it hardened. It ended up being like those store bought ice cream toppings but more delicious. The peanut butter did take over the ice-cream flavor so I would suggest sticking to a plain flavor like vanilla or chocolate.


Even though the consistency was not what I expected I still love this product. I think this coconut peanut butter will be great to add to cakes, breads, and even cookies.

Gourmet Coffee With DaVinci Gourmet Review & Giveaway

Ever since becoming a stay at home mom, coffee has become my lifesaver. I'm not an early morning person as it is and waking up with a baby makes it even harder.

When you have that first sip of coffee it is pure joy. Not all coffee will do though. My coffee needs to taste like the coffee I get at a coffee house. That's where DaVinci Gourmet comes in, they create syrups for your coffee so you can create your own gourmet drinks at home.

I recently was given the chance to try three of their syrups: Sugar-Free Vanilla, Raspberry, and Kahlua.  


I tried the sugar free vanilla but did not like it.  I'm just not a fan of artificial sweeteners. However,
I do like the fact that they have sugar free as an option for people who cannot have sugar.

I found that the raspberry syrup tasted great in my mudslide coffee with cafe mocha creamer. It was a great chocolatey taste with a hint of raspberry, very tasty. It reminded me of those candies that are chocolate but have a raspberry flavor.

I tried the sugar free vanilla but did not like it.  I'm just not a fan of artificial sweeteners.
I do like the fact that they have sugar free as an option for people who cannot have sugar.

Kahlua ended up being my personal favorite. By the second day half the bottle was gone. I only tried this flavor in my coffee but if you go to the DaVinci Gourmet website they provide recipes to their syrups.

Tropical Traditions Virgin Coconut Oil Review & Giveaway CLOSED


I was recently given the chance to try Tropical Traditions virgin coconut oil. All I can say is this is great stuff. From the moment you open the jar you are in coconut heaven. The oil smells so good you just want to taste it. Don't taste it by the way. I did and it tastes like oil and not the sweet smell of coconut.

I decided to try this oil by making a banana bread recipe that I found on Tropical Traditions recipe blog here. I traded out the whole wheat flour for white flour (it was all I had). I also replaced the 2/3 cup of flour for a 1/2 cup oatmeal. I did not have any shredded coconut either.

While making this I had to resist the urge to eat the batter itself. The coconut has such a strong sweet smell, which makes me hungry to try it.

When I finally got to taste that first bite of banana bread I was in heaven. The bread tasted great. It was soft, moist, and didn't have a strong coconut flavor like you would assume. I believe this is the best banana bread I have ever eaten and I blame the oil. I see a lot of banana breads in my future.

Green Toys Review and Giveaway CLOSED



When I first heard about Green Toys I didn't know much about them but I was curious.  What makes their toys great? What makes their toys green?

Green toys have graciously given me the chance to review their block set so that I may find out for myself what makes them great. After looking at their website I also found out how they are green.

They use recycled milk containers as the main ingredient in creating their toys.  When you finish your milk and toss the container in the recycling bin, these milk containers are collected at your curb by a local recycling company, who then sorts them from all the other types of plastic. Next, the milk containers are reprocessed into super clean fresh plastic. The plastic material they use is called high-density polyethylene (or HDPE). This material is considered one of the safest, cleanest plastics around. 
They contain no traceable amounts of Phthalates or BPA. They are also designed without any external coatings, eliminating the fear of lead paint.
Even the box is  100% recyclable.








That explains how they are green, now on to why they are great. The blocks themselves are light and easy for a baby to pick them up. As you can see my baby enjoyed playing with these blocks. He still doesn't get the concept of building with the blocks but he sure had fun knocking them over.







My favorite part is that these toys are made with recycled materials and are printed with soy ink. No need to worry about lead in your baby's toys. Which is great considering my baby felt the need to do a taste test on these blocks. He thought they tasted great by the way.
