Meatless Monday with Bob's Red Mill Bountiful Black Soup Recipe

Ingredients

2 cups Roasted Corn   
3 Tb Olive Oil   
1 medium Onion, chopped   
4 stalks Celery, including leaves, chopped   
4 cloves Garlic, minced   
8 cups Vegetable Broth   
1/2 pkg (1 3/4 cups) Bountiful Black Bean Soup Mix   
1 - 28 oz. can Tomatoes, diced   
2 cups Butternut Squash, cut into large bite-size cubes   
2 Bay Leaves   
1 tsp Basil   
1 tsp Thyme   
1 tsp Oregano   
1 tsp Smoked Paprika   
Salt and Pepper to taste 

For roasting the corn it is best to use frozen, however, all I had was canned. Preheat oven to 350 degrees. Spread the corn on a baking sheet and roast for 15-20 min stirring occasionally.

Heat oil in pot over med-high heat. Add the onions and celery and cook for 5-7 min. Add garlic and cook for one min. Stir in black bean soup mix, tomatoes, butternut squash, and roasted corn. Add the herbs and bring to a boil. Once the soup comes to a boil reduce the heat to a simmer. Cover with a lid and cook 1 1/2 hours, stirring occasionally. You can add more broth or water if too much is soaked up.

I found this recipe on the back of the bag of  Bountiful Black Bean Soup Mix . After making this I knew I just had to share it with you.I really enjoyed this soup and that is saying something for someone who doesn't like beans. At least I thought I didn't like beans.  The soup has great flavor and is a really healthy option, packed with lots of fiber and protein.  This recipe makes a lot of soup so it is perfect for freezing.

Meatless Monday: Baked Eggs With Spinach



Today's meatless recipe is Baked Eggs With Spinach. A simple healthy dish that is quick to make and delicious to eat. My only complaint is that it was a little juicy. Next time I might drain the tomatoes just a bit. I just realized the ingredients list says to drain the tomatoes. That shows how much I follow recipes exactly.


Recipe inspired from my recipes and originally from Ingredients
1 tablespoon olive oil
1 clove garlic, finely chopped
1 14.5-ounce can diced tomatoes, drained (I used diced tomatoes with Italian seasoning.)
Kosher salt and pepper
2 8-ounce bunches spinach, trimmed
8 eggs, separated (yolks kept whole, if possible)


I used diced tomatoes with Italian seasoning.


Heat oven to 400 degrees.


Begin by heating oil in a pan and cooking the garlic for 1 minute. Add the tomatoes, salt, and pepper and simmer for 3 mins.




Add the spinach and cook until it wilts. It should only take a minute.










Pour the mixture in a 2 qt baking dish that you sprayed with Pam.
Next crack the eggs into a dish. I added a little milk and green onions to the eggs. The original recipe says to separate the yolks but I just whisked them all together.




Once you whisk the eggs pour them on top of the spinach mix. Bake for 20 minutes until eggs are set.

Meatless Monday: Roasted Vegetables



Meatless Monday is a campaign started to reduce the risk of preventable disease by cutting back saturated fat. My goal is to bring you a meatless recipe every Monday. The first Meatless Monday recipe is Roasted Vegetables. I love vegetables and I love them even more roasted. Roasting the vegetables brings out the sweetness in them.

Ingredients

Any vegetables you like. I used Zuchiini, butternut squash, bell pepper, onion, and carrots.
2 Tbs rosemary
2 tsp thyme
1/4 cup olive oil
2 Tbs basalmic vinegar
salt
pepper

Preheat oven to 475 degrees. Chop all your vegetables into 1/2 inch pieces.


Combine rosemary, thyme, salt, pepper, oil, and basalmic vinegar and pour over vegetables. Mix together, don't be afraid to get your hands dirty.


Pour into two 13x9 inch baking dish. Bake in oven for 35 to 40 min, stirring every 10 min.


Serve.
